I'm all about Eggplant at the moment... probably cause I had to reduce my hummus intake so I took on babaganoush as a substitute and it's escalated from there... I had these amazing sweet miso coated eggplant on a stick the other week and now I've made this salad both Saturday night and last night. It was inspired by a @jshealth recipe but I added some personal touches - like a pomegranate molasses and tahini dressing. Eggplant isn't just a yummy, easy bake, warming veg it's full of essential nutrients your body needs to thrive such as vitamin c (needed during this flu season), magnesium, iron, & fibre! It's best baked (rather than pan fried) as it holds the nutrients in. I shared this meal with my gal pal @ellydrayton who is a regular at @dinnerwitholympia and a great guest (she polishes my wine glasses and brings me vegan ice cream) We had a glass of Cab Sav with this meal and Elly did a really good Sophie Monk impression before the Bachelorette premier.
This Wisteria looks and smells amazing. What I particularly love about this one is that it's in a pot and can't grow rampantly like it would if it was planted in the ground, but it still flowers beautifully.
