I had an early morning today so was planning a relaxing Saturday night with a nice meal and early to bed . A car accident nearby knocked out a pole and my whole block lost power for the better part of early evening. So when I got power back at 10 pm I definitely didn't feel like cooking but had missed dinner. Easy chicken lettuce wrap with wing sauce. Glamorous? No. Ideal Saturday night meal? No. But, it's one meal in the grand scheme of things. Sometimes making healthy eating more low maintenance and simple is the way to do it. It's easy to get attached to making an elaborate production out of dinner or meals. But hey, it's just food. Don't get me wrong I like nice meals and new dinners but most of the time it's simple and easy.
