Try this baked snapper recipe and serve with roast potatoes and a leafy green salad with mango.
- preheat oven to 180 degrees
- chop and slice 1 lemon, 1/2 spanish onion, 1 bunch corriander, 3 cloves garlic, 2 red chillis. And combine these ingredients in a bowl with 1 teaspoon olive oil and season with salt and pepper.
- stuff the fish with the filling and scatter lemon slices and some of the filling over the skin.
- wrap the fish in alfoil and bake for 40 minutes.
