Dinner/Cheat meal: 2 packs of egg noodles. 1 palm of chicken breast. A cup of Sweet tomato sauce. 1/4 cup of Soy sauce. Garlic&Onion. Cucumber. Skyflakes. Total calories: 1,005Kcal -------------------------------------------------- This doesn't look like a cheatmeal but believe me this is such a heavy meal! Just so you guys know, I LOVEEEEE NOODLES or PASTAAAAA! Any kind! So I've decided to eat two packs of Egg noodles for my cheatmeal today. Worth it! But my body is already used to eatig small so I ate this kind of slow just to make sure my tummy win't get shocked with too much food. What's your favorite unhealthy food? Haha, but seriously, this picture totally isn't reality for me 90% of the time. This was a pretty snack bowl I made Thursday afternoon to enjoy while I worked on internship stuff. No, this morning when I had watermelon I simply rolled out of bed in my underwear and socks, grabbed a spoon, reached into my fridge to grab myself some sweet ice cold deliciousness, and ate half a family sized watermelon straight out of the rind.

I love looking in my fridge when I'm running low on groceries.. it's when I come up with some really delicious combinations! I just fried up some leftover corn on the cob, diced tomatoes and then some fresh basil. Poured the warm mixture over a bed of spinach . Topped with feta and a fried egg! It was quite delicious!
After a day filled with one too many "Agua de Valencias" (aka orange juice with 4 different types of alcohol + sugar + definitely not water), this was exactly what I needed today — arugula salad with smoked salmon, feta cheese, walnuts, + honey, and an almond milk matcha latte!
Bringing out the crockpot today to make my own quinoa energy bars!! 2 eggs, 1 cup unsweetened almond milk, 1 apple, 1/3 cup of each (uncooked quinoa, raisins, apple, almonds), 2 Tbs of each (pb, pure maple syrup), and vanilla extract. Cooks in 3.5 hrs on low heat setting. Will post finished product after my Saturday "morning" (it's already 11:30 lol) workout!

Packed a smoothie for lunch on the go because I'll be driving to my little brother's high school GRADUATION today . I can't believe it's already here. I'm 7 years older than him and I remember in middle school sitting in my bedroom with my best friend calculating how old we would be when he graduated high school. Pretty sure our exact response was "EW we will be so old" 🙄. Happy graduation day, Chandler! I love you to the moon and back and am so incredibly proud of you . Savor it:
1 cup frozen cauli, 1 cup @so_delicious coconut milk, 2/3 c bluebs, half a frozen banana, 1 heaping tbsp @crazyrichardspb PB, 2 scoops @furtherfood collagen protein, 1 tsp @fourthandheart vanilla bean ghee, 1 tsp vanilla, dash sea salt, and @sunpotion cordyceps + pine pollen. Topped with more bluebs and @dangfoods shredded coconut
My new favorite twist on Brussels sprouts. Instead of roasting, try slicing them thin and cooking with garlic, avocado oil, grainy mustard and balsamic on the stove top until they are crisp on the edges and deliciously caramelized.
2 pounds of Brussels sprouts,
sliced thin (about 1/8 in thick)
8 garlic cloves, sliced (not chopped)
1/3 c balsamic vinegar
4 tablespoons grainy mustard
Salt and pepper to taste
2 tablespoons avocado or extra virgin olive oil
Add oil and garlic to a cold pan and turn on to medium low heat. Allow the garlic to slowly cook and soften and infuse the oil with flavor. Add the Brussels sprouts and season with salt and pepper. Continue to cook on medium heat until the Brussels sprouts start to soften a bit, about 7-8 minutes. Turn the heat up to medium high and cook for another 2-3 minutes allowing the sprouts to brown. Mix mustard and balsamic in a small bowl and add to the pan. Stir quickly and constantly for a few minutes until the sauce thickens, becomes sticky and the sprouts of evenly coated. Canela; todo a una olla caliente, que se cocine y listo!
