Happy Days! With spring time here, I feel it is time to put the slow cooker away and let my love of raw foods shine forth! I prepared my own of raw "slow cooked" veggies today(in the jar). I have enjoyed marinated veggies before with different herbs and spices. So today I have started to experiment. I want to try the spices I have been using in the slow cooker in a new way. I am now blending them with coconut meat and water with salt and pepper to be left overnight to marinate some veggies. I have started with my favourite spice mix... laksa, and am marinating cauliflower and red capsicum. There might be a a bit too much spice for the raw version, but I am delighted that I felt inspired to get this idea out of my head and into the fridge! Tonight was a lovely slow cook mix of spices, celery, carrots and potatoes with a side of hummus, olives and rocket. I have certainly needed all these cooked veggies as a bridge and stabilising force between my old junk food diet to my dream raw vegan Omad lifestyle. I feel really excited, because I am being more consistent in moving into the directions of my dreams more then ever before! It is wonderful. In the past it was always a yo yo - water fasting - raw vegan - junk food - juice fasting - and round and round I would go like a pin ball in a game, bouncing around reacting to life and go off in full force into all opposing directions from day to day. But even though I have not had a single raw vegan day in the last year, I feel I have made great progress in creating lifestyle changes that will support my raw vegan Omad lifestyle, long term, till the day I day, dreams. I am looking forward to the day where my raw vegan Omad lifestyle is easy and habitual and I can put all this energy and thought into another arena of my life. But for now... I am still celebrating my small wins every day!
This is one of those meals that will make you feel like a million bucks, trust me 🏽 Not only are these stuffed peppers so easy to make, but they are SO delicious And they are so easy to make vegetarian (use fake meat!) or vegan (use dairy-free cheese!) Add in a side salad, and you'll be stuffed like your pepper, but your body will thank you What are your easy, favourite or go-to recipes for dinner?! I'd love to hear!!
