A master of growing and blending, Cesare, our diretorre, knows how the land can influence the flavour of the oil. Cesare is not only a local Orvietano preservationist, but a Certified Olive Oil Taster. In his opinion, the finest land in Orvieto for growing olives is on the Fiore Estate.
Our first olives harvested are the Leccino, followed by the Frantoio, then the Moraiolo and finally the Canino. We start at the lower elevations, and often go through the groves more than once. This ensures a balance of a fruity aroma and green pungency—and a high presence of antioxidants.

We are thrilled with the results of the 2017 TerraOlivo Mediterranean International Olive Oil Competition. Our Olio Reserva has achieved BEST ORGANIC EVOO IN THE WORLD along with Top 10 oil in the competition and Gran Prestige Gold. Olio Veritas also received Gran Prestige Gold while Olio Novello and Olio Monaco were awarded with Prestige Gold. We couldn't have hoped for a better result to complete this year's awards season.
