Double chocolate #vegan cupcakes from this morning. My new favorite! Lol
That is a two ingredient chocolate frosting, made with melted dairy free semi-sweet chocolate and no cocoa powder or even any powdered sugar.
I used the 2D tip but may consider a different one next time since the chocolate would solidify in the tip so quickly but I do like how it looks! I think I have a jinx with the 2D, it's my favorite but I always have an issue with it lol
we've got a play date this morning, so i pulled out a jar of apple cinnamon overnight oats for a quick breakfast. 🏻: 2/3 C oats
1 1/2 C coconut milk
1 1/2 tbsp chia seeds
1 tsp vanilla
a dash of stevia
sprinkle some cinnamon
mix everything together in a jar
top with diced up apple!

Lunch special #1 (available through Friday!): Buffalo Chicken Salad Lightly breaded chicken fingers tossed in our spicy buffalo sauce over a bed of Romaine lettuce, shredded carrots, shaved celery, diced red onion, black olives, chopped bacon, blue cheese crumbles and bleu cheese dressing.
