Dinner is done! Check that rainbow. At 5:10pm I still didn't know what I was going to create tonight. By 6 we were sitting down to this deliciousness. Satay chickpeas with red capsicum, kale salad, and an ancient grain 'rice' blend ... think quinoa, millet, amaranth, etc. I'm so disappointed that there aren't any leftovers *sigh*
