Matcha Ice Cream
I was so indecisive when it came time to choose which Matcha to use for this recipe! 🤷♀️ ~
They all sounded so good--banana , vanilla, strawberry , peppermint, mocha , coconut, pineapple punch ...seriously, it was such a tough choice!
Fortunately, this turned out amazing and I will be making it again, trying ALL the flavors this summer! ~
I chose MOCHA this time!

1 1/2 cups unsweetened coconut water
2 tablespoons coconut shavings or coconut milk
2 cups baby spinach
1/2 frozen banana
2 teaspoons matcha green tea powder (try my fave, Matcha Love by Ito En)
1 cup ice
Add ingredients into a blender and blend until smooth.

My daughter is matcha-obsessed so I've been making her a matcha latte in the mornings - and now I'm a little matcha obsessed too. I still love and adore my #bulletproofcoffee but now I sometimes switch it up with a #bulletproofmatcha. Matcha has caffeine but it's less jittery than coffee because it also has theanine, an amino acid that has a calming effect (and aids in concentration as well). Matcha is different from other varieties of green tea because instead of just steeping and tossing out the leaves, Matcha green tea leaves are ground into a powder that completely dissolves in water. It's loaded with antioxidants - in fact it has more antioxidants than blueberries, leafy greens and walnuts. Antioxidants are those nifty little things that prevent or stop cell damage (#anticancer#antiaging#antiinflammatory). Matcha also helps boost your metabolism (!!) but don't ask me to explain the science behind why that's true because science
There are a million ways to make matcha lattes. This is mine:
I heat about 1 cup of water and 1/2 cup of almond, coconut or hemp milk (whatever is in the fridge) on the stove until barely boiling. I add it to my blender with 1 tablespoon of coconut butter (healthy fats), 1 scoop of @vitalproteins collagen powder (great for skin and healing for the gut), 1 teaspoon of some kind of adaptogen (currently in love with a @lifehousetonics blend that helps boost cognitive function and includes reishi, lions mane and coryceps) and a few drops of vanilla stevia from @sweetleafstevia.
Blend for 1-2 minutes and you have a frothy, delicious, energizing and HEALTHY bevvie that will start your day right. 🏻🏻
