Hi, everybody!!! Been a bit MIA recently. I do apologize as I have been super busy transitioning back into "real life," following summer. For those of you who don't know, I live and work in New York City but spend many long weekends and most of my summer in upstate New York where I get to be inspired by the quiet, trees, and super fresh air (something I grew up with and always took for granted -- NOT anymore)!!!
Regardless, I'm still here and still eating a TON of veggies. Tonight though, I felt inspired to share with you, my late "dinner with a view" of the East River in Manhattan. Being as busy as I am, I don't get to spend a lot of time here. But tonight, it is all about me (my EXTRA long weekend starts now) and I am in no way feeling guilty about that. I have my music on and just made myself a bunch of broccoli, asparagus, and vegan mac 'n' cheeze. I'm enjoying a delicious bottle of red wine (courtesy of my epic boss) and I have vegan cookie dough defrosting and ready to be popped into the oven whenever I'm ready (could you guys tell I love food and care nothing about food combinations?). Once the cookies are in, I'll probably sit down with A Course in Miracles, or pick up where I left off with my coursework for the Institute for Integrative Nutrition.
For me, this is relaxation. Where I get to be at home, enjoying a home-cooked meal, listening to music and educating myself on the things I'm deeply passionate about. Not to mention, I get to sit for long enough to be reminded of all the ways I'm blessed. This fall marks two years that my boyfriend and puppy have been inhabiting our little co-op in New York City and I have never thanked God as deeply as I have tonight for it. And sometimes, we just need to shut off for long enough to be able to do that..
