I'm really craving #tacotuesday today but I'm really trying to keep my diet clean. So tasty and really satisfied my taco craving. So today's dinner was tempeh strips sautéd with taco seasoning, cauliflower rice (my first time eating and can I just say OMG!), cashew sour cream, avocado, @vitaleatsllc zesty cheezy sauce (the closest thing to queso a vegan could ever ask for!), and tenayo chipotle salsa
I was too hungry to post a pic of my dinner, I had a veggie burger with mushrooms and onion sauteed. And this big beautiful cherokee purple tomato from my garden. I've been struggling with the #plantbaseddiet for the last couple of days. In still a work in progress, and seeing how some hard core vegans put people down for not making the same choice makes me not want to be #vegan . Being hateful to people does not help your cause. For one thing, 40 years of diet isn't going to change overnight. I'm not normally one to cause friction, but just being #honest #showlove#kindness#dobetter#veggieburger#homegrown

I'm a lucky girl! My husband came home tonight after being away for a few days on a business trip and cooked me dinner while I was at work. Like omg how good does this look!? 🤤It tasted just as amazing too. He concocted an oil free mango fried rice and baked coconut horseradish tofu using a cashew and horseradish sauce that is out of this world! 🏽I'm tempted to drink it straight from the blender. How is my husband more creative than me when it comes to cooking dinner?? The student surpasses the teacher tonight for real.

Some truth about me: I stopped eating animal products about a year before I got pregnant with Ali, because I knew all of this info already. The link between animal products and disease is undeniable, yet we are still being told to give our kids cows milk for strong bones (lie), eat tons of eggs/egg whites/chicken to build muscle (and clog arteries), and drink whey protein after a workout (inflames the gut to breed diseases). Meat turns into a carcinogen in our body IMMEDIATELY, and once disease inevitably hits, we are pumped with medicine instead of dealing with the root cause; our diets.
The only animal protein that I started to eat again while pregnant was a little organic chicken, turkey and eggs occasionally at dinner, but unfortunately, the result is the same. The rest of my diet was plant based, and I'm ready to remove it all once again.
It's so important to research and dig deeper into what we are told through the media, and realize that the animal farmers and "health leaders" such as the American Cancer Society and American Diabetes Association are a business within each other. Own your own health!
I'm just having one of those perfect summer nights where I'm still sun drunk from the lake and so instead of going to the grocery store or out to eat, I combined the left over ingredients in the fridge.
Recipe: @latortillafactory spinach and kale wrap with 1T sour cream. You could easily use greek yogurt or veganaise as well! I added 3 eggs, kale from my garden, cherry tomatoes, all topped with microgreens, himalayan salt, and pepper.

I how you can throw together simple ingredients and end up with a bowl that looks like this! Super simple chili made with #traderjoes soyrizo , a mix of beans, corn , mushrooms , peppers ️, onions , tomatoes , spices and #betterthanbullion vegan no-beef stock. Topped with green onions & black olives . My 🥑 weren't ripe or they'd have gone in as well! Happy Day 230
