This "Matcha Green Tea Coconut Curry" is our favorite recipe so far! There are soooo many wonderful flavors. We promise the entire family will love it (including the little ones). See the recipe below!
Ingredients: 1 tsp of matcha powder 2 tbsp of lemongrass paste 1 red pepper 1 can of lite coconut milk 2 chicken breasts 1 box of sliced mushrooms 2 zucchini 1 sweet onion 1 tbsp of coconut oil 2 tbsp of fish sauce 1 tbsp of brown sugar 1 tbsp of lemon juice 2 tbsp of green curry paste 1 bunch of fresh basil leaves 3 thai chili peppers (optional) lime (optional) cilantro (optional)
Directions: Cut the sweet onion and sauté the onions in coconut oil (in a pot) until soft. Cut the chicken and zucchini into cubes and add them to the pot. Cut the red pepper into strips and add them to the pot. Add the mushrooms to the pot as well. Cook the chicken and vegetables for about 3 minutes. Then add 1 can of coconut milk and 1 cup of matcha green tea to the pot (note: make the matcha green tea ahead of time with 1 tsp of matcha powder and 1 cup of water). Add the remaining ingredients and bring it to a simmer. Let it simmer for 10 minutes. For extra spice, add 3 thai chili peppers and let it simmer for an additional 3-5 minutes. Remove the thai chili peppers before serving. Serve over brown jasmine rice (optional) Top with cilantro and a lime wedge (optional)Enjoy!
