2 x 400 g tins of chopped tomatoes
2 large tomatoes, sliced
6 large eggs, preferably free-range or organic

It's feeling less #manicmonday and more Monyay (is that a thing?!) with a scrumptious breakfast and a big ol' cup of coffee in front of us. This #tofu scramble is #vegan with spinach, yukon potatoes, roasted peppers, vegan (soy-free!) #cheese, and #toast with onion marmalade. The start of this week is suddenly lookin' reeeeeeal good, guys.
