Yummy dinner tonight. I meal prepped a bunch of chicken thighs, rice and sweet potatoes at the beginning of the week. When you prepare the essentials for your meals ahead of time, it's so easy to make easy and healthy meals. For dinner tonight I had chicken over a hot sweet potato, topped with diced red onion, cilantro, green peppers and a squeeze of lime. SO good and super clean!
