Butternut squash kinda day
Every year I am looking forward til soup season starts.. For me soup is the most simple yet tastebud fireworks exploding food you can find.. Butternut squash is so colorful and creamy and just looking at it makes me smile.. The sweet taste makes for a very safe yet interesting toddler meal and the rye bread crumble adds a little texture to the equation.
Dice two small butternut squash. In a pot add one tbsp coconut oil, one square bouillon, one tbsp of your favourite curry, two tsp turmeric, a pinch of pepper and two bulbs of garlic. Roast shortly and add the butternut squash and water until it is covered.
Let it simmer boil for about half an hour.
Meanwhile dice ryebread and add to a saucepan with about a tbsp oliveoil, salt pepper and some thyme. Roast until golden.
Make sure the butternut squash is soft and blend until creamy.. serve hot to luke (be aware that the soup can get really hot, and could be a burning hazard for eager toddlers - and grown-ups)
