Quick delicious lunch! Eggplant Tuna Spaghetti in a garlicky tomato sauce with Greek olives and feta cheese served with a homegrown salad and a small glass of white wine while listening to violin music. Perfect made by frying diced eggplant in olive oil until browned, added onions, then garlic. Then added a tin of tomatoes and a small size tuna tin. Seasoned with chili powder, black pepper, salt & a little sugar. Add olives. Meanwhile boiled the pasta. When done tossed with a bit of sauce and splash of pasta water. Served on plates and spoon more sauce on top and crumbled feta and grated Parmigiano. Touch of extra seasoning. Served with salad of mint, Basil, spinach, arugula, tomato and avocado tossed in vinaigrette of olive oil, lime, mango balsamic vinegar, salt, honey & black pepper every opportunity has the potential to be made special.
