late afternoon lunch
homemade sprouted buckwheat bread with peanut butter, red mizuna sprouts, arugula sprouts, salt, and evoo. (this was consumed before 3 pm PST cause I'm trying to eat keto after 3 pm)
you guys, I LOVE peanut buttah and sprouts. Haha, instead of peanut butter and jelly. I use olive oil to keep it moist.
I made dat sprouted buckwheat bread without a recipe! It turned out really well for eyeballing it. It's made with sprouted buckwheat (hulled), unhulled buckwheat flour, ground flax seeds, yeast, olive oil, and a splash of honey. I pureed the sprouted buckwheat in my @vitamix before mixing it with the dry ingredients.
And these sprouts. RED MIZUNA SPROUTS!!? There's a farmer at my local farmer's market that ONLY sells sprouts. He cuts them right in front of you when you buy them. They are so tasty. Sprouts are PACKED with nutrients. How do you eat sprouts? Anything creative besides on a sandwich or in a salad? I'm looking for new ideas!
Latergram of this morning's weekend brunch! On weekends I like to do something quick and yummy with all of my leftover veggies from the past week. For this I sautéed onions, zucchini, bell peppers, mushrooms, S+P in a cast iron skillet and then added 8 eggs (beaten) and scrambled the whole mess until the eggs were cooked. Meanwhile I was toasting taco shells in the toaster oven; I greased a glass baking dish and crumbled the toasted shells into the bottom, then poured tomatillo sauce over the top. (It was homemade... do you guys want the recipe?) Next I transferred the eggs and veggies into the baking dish on top of the tortillas and sauce. Sprinkled cheese on top and baked at 400F for 20 minutes! The sauce and shells form a nice crust in the bottom of the pan Just love that this is relatively low-carb, high-protein, helps me get in a serving of veggies AND tasted delicious... Score!!! I fully hold @dano.does.keto responsible for this breakfast burger I split and threw bacon, fried eggs, and extra sharp cheddar cheese on for dinner. 🤷🏻♀️
The cherries at TJs are legit. Delicious dessert.
Simple, clean, healthy dessert....nothing better!.
This cookie skillet is appropriate for even the most challenged baker....ME. You can't really mess this up AND there are so many variations you can make from @rachaelsgoodeats original recipe depending on what you have in the kitchen 🏻.
3 tbsp maple syrup
¼ cup coconut oil, melted
⅓ cup @traderjoes Mixed Nut Butter.
1 tsp vanilla extract.
1 tbsp Coconut Milk
3/4 cup @ottos_cassava_flour
¼ tsp baking soda
¼ tsp cinnamon
Handful of @enjoylifefoods Chocolate Chips
¼ tsp sea salt
8-inch cast iron skillet, a baking dish, cake tin, or loaf tin.
Preheat oven to 325. Whisk egg in large bowl then pour in maple syrup, melted coconut oil, cashew butter, vanilla and almond milk to whisk again.
Stir in flour, baking soda, cinnamon and some of the sea salt. Fold in chocolate chips, leaving several chocolate chips aside.
Very lightly spray an 8-inch cast iron skillet with coconut oil then pour batter into the base and spread out evenly using a silicone spatula. Place the last several pieces of chocolate over the top, sprinkle sea salt, then place in the oven for 18 minutes on the center rack. Turn the oven on low broil and cook 1 additional minutes **keep a close eye on it because it can burn quickly! Take out when just the slightest bit of toasty brown. Don't worry about under cooking!.
Serve HOT and enjoy every single bite. Serves about 4 people or maybe 2-3 nights of baby slices, if you're lucky enough to not eat the whole thing in 1 sitting 🤷🏼♀️

One thing I've learned is that we have to focus on improving a little everyday, every week. It's not a matter of being perfect, but it's about focusing on improving a little bit each time.
