Meal prepping since my son has me home sick. May as well catch up on prep and cleaning! I made a ratatouille pasta. This is the vegan version. You can easily add meat (such as sausage or chicken) or some cheese (such as mozzarella or Parmesan) if you prefer a non-vegan version. This is LOADED with veggies. Zucchini, eggplant, tomatoes, onion, garlic, and pasta all brought together with spices and balsamic vinegar. Best part? It's a one pot dish and it only costed me around 5-6 dollars!!! tip of the day: shop for meats in the clearance section of the meat department and freeze what you find!! Also, there is typically a clearance produce section too... that's where I got my 3 zucchini for a dollar and my giant organic eggplant for a dollar!!! Oh this yummy! Kung pao stir fry. I've got loads of veggies in here, I was going to use tofu instead of chicken but actually decided to use egg whites as my protein. I'm going to pack up some brown rice and there I go. Lunch for the next 3 days!!
