It's a bowl kinda night. Scrambled chickpeas, broccoli quinoa pilaf, marinated cucumbers, chopped spinach and a "romesco" sauce. I garnish with capers ( cuz my boy loves em) and chopped parsley.
Full disclosure: I'm a pretty lazy cook. The reason I make broccoli quinoa pilaf is cuz I can cook them both in the same bowl. 5 minutes before the seasoned quinoa is done, throw in the broccoli. One pot, baby and the broccoli always comes out perfect. Oh, and I make my romesco with any color peppers I want, cuz I'm a kitchen rebel! And I don't add bread. So long as you got some smoked paprika, garlic, nuts and the vinegar and oil, it makes a delish, spoon licking sauce!
